About cholesterol… According to all of the books I mentioned (and other articles I’ve read), the actual problem with LDL cholesterol isn’t the LDL itself, but what carbohydrates do to it in the bloodstream. LDL particles are larger when one isn’t eating large amounts of carbs, and it’s the size of the particles that’s the problem. Smaller particles can get in places they don’t belong, causing clogged arteries. One of the things I learned reading those books is that many of the results of studies don’t apply unless one is eating the same diet as the people in the study, which is likely to be the modern, high-carb diet. People eating a keto diet often have better cholesterol and triglyceride numbers than people eating a ‘regular’ diet. So, going keto might actually help with your cholesterol!
